Easy Meals to Cook While on Vacation

Vacation meals should be light and fast to keep you full of energy and on the go. Enjoy your next vacation instead of spending it cooking for hours in the kitchen. Build-Your-Own

    Set up a build your own taco, baked potato or chili bar. This limits your cooking to one item that can even be prepared a couple of days in advance and reheated on the day of the event. Keep hot items warm in a crock pot on a low setting. Assemble a wide variety of choices and save time by using prepared items like jarred salsa and shredded cheese. Set out plenty of tongs, spoons and ladles for each option so they are not mixed together when spoons are reused. The build-your-own concept allows each member of your family to design their meals to their specific tastes. This reduces the time you spend in the kitchen, and the family can go back for second or third helpings if you have enough toppings.

Pizza Supreme

    Buy frozen plain cheese pizzas and quickly turn them into something deluxe. Sprinkle seasonings like dried basil or oregano over the surface of the pizza. Add extra cheese, or even a variety of cheeses, and let a little overlap on the crust. Toss on your favorite toppings, like frozen or fresh vegetables, and cut everything into small, similar-sized pieces for even cooking. Set your oven at 25 degrees below the instructions on the frozen pizza and check on it without opening the oven door if possible. Serve a few different choices of pizza with grated Parmesan and red pepper flakes. You will be out of the kitchen fast and eating a delicious pizza made mostly by you.

Go Raw

    Break out that food processor for a healthy raw meal that treats your body right. Serve a meal of fresh fruits, vegetables, nuts and berries. Explore your local green grocer for a selection of in season natural foods to prepare a fresh feast full of life and color. Set up a basic fruit platter with different tastes and textures. Blend ripe tomatoes or avocados with garlic and onions and your favorite seasonings for a flavorful, refreshing cold soup. Make an herb-seasoned yogurt dip for raw vegetables like carrots, celery, broccoli and cauliflower. Serve frozen berries sprinkled with sugar, nuts or granola for dessert. You will notice an extra spark of energy in your step after this no-cook healthy vacation meal.
